Thanks to my favorite Mexican restaurant here where I live, I love this easy simple desert!!
Flour tortillas fried and topped with sweetend condensed milk. I also put a little chocolate or strawberry syrup on there sometimes too ;-)

The last post was a s' more sandwich. This one is a s' more pie. Well kinda ;-)
Chocolate pudding
Mini pie crust
Mini marshmallows
Make your pudding according to the package, fill pie crust.
Let set for 5min. Top with marshmallows and place under a hot broiler untill marshmallows are browned. ENJOY!!

I know everybody and their mother has probably had these before, but I had to post them, they were so good!
S' more sandwiches are ewy-gewy goodness!!
My ingredients are as follows: (tweak to your liking)
I used Sippy dark chocolate peanut butter
(nutella would be great, too)
2 large marshmallows cut in half
2 slices of bread
I put it in my sandwich maker until the marshmallows were melted....and oh so good!!!
If you don't have a sandwich maker just cook it like you would your grilled cheese ;-)

Today I wanted to share breakfast!! My favorite "quick" fix. Oatmeal!!
Its all about the extras with this one ;)
One package of Brown Sugar Instant Oatmeal fixed as normal.
I have added (approximate amounts)
1 table spoon of butter
2 to 3 tea spoons of cream cheese (just plopped on)
2 or 3 cut up Strawberries
1 hand full (or 2) of dark chocolate chips
and a drizzle of honey
Yum!! Makes me smile....Soooo Goooood !!! and Soooo easy!!!
And at times instead of the dark chocolate chips I have added in Blueberries :)

What's for dinner?
Ok...So I wasn't quite sure what to make for dinner the other night. I was thinking mexican and didn't have any lettuce for our usual tacos, and really I wanted something different. So I came up with this....
Mexican lasagna or Mexican Casserole ??
2lb. Ground beef
2pks taco seasoning
8 or 10 in soft taco shells
2 cups any kind of shredded cheese (I used pepper jack)
Corn chips
Brown your meat then add taco seasoning and 1cup of water
Spray a casserole dish with cooking spray then place 2 soft taco shells on the bottom then layer with meat next cheese....continue untill there is no meat left... (mine made 2 layers)
Top with cheese and crunched up corn chips and bake at 350 for about 20 min or untill cheese has melted.
I served mine with sour cream on top ;-)
(I think it would have been good to layer the sour cream in before baking aswell)
